Today begins the day of a new leader. The theme of change in 2009 is everywhere, and you can adapt this change to yourself and to your body. The change will be good for our country, which will reflect on the people and hopefully inspire you to eat healthier and see results. We've got some red, white and blue foods from FoodTrainers.
- For breakfast, we suggest a homemade patriotic parfait with plain yogurt, wild blueberries and raspberries.
- Yogurt has probiotics for your immune system. Wild blueberries are one of the fruits with the highest ORAC score. This is a measure of the antioxidants in fruit. In the winter months, frozen berries are fine and thaw easily.
- For lunch, we like our United Salad (of America), with chicken, jicama and scallions for the "white"; pomegranate seeds for the "red"; and a teaspoon of crumbled blue cheese (for flavor). Many white vegetables, such as onions and garlic, contain compounds known as alliums, which have strong anticancer properties.
- For your snack, or "presidential pause," try some baked blue and white corn chips with a spicy salsa. Capsaicin, responsible for the spice in hot peppers, is a metabolic booster.
- And finally, our "state" dinner would consist of halibut (rich in omega-3s), mashed cauliflower (a healthy stand-in for mashed potatoes) and roasted beets.
